Food Friday: “Vegan Bible”

Today’s Food Friday recipe comes from Grub Street Publishing and Marie Laforêt‘s Vegan Bible. Just in time for the Super Bowl this weekend, this week’s appetizer will be a perfect addition to any festivities.

This recipe will be perfect for your Super Bowl 50 party this weekend. ‘Cheese’ and Cherry Preserve Canapés will delight all guests, vegan and non-vegan alike. Keep reading for the full recipe.

‘Cheese’ and Cherry Preserve Canapés

Serves 6

200 g stoned cherries, roughly chopped
1 large onion, sliced
1 tbsp olive oil
2 tbsp balsamic vinegar
5 tbsp cane sugar
1/2 tsp salt
200 g melty vegan cheese, finely sliced
6 large slices bread
pepper

Heat the olive oil in a saucepan and saute the onion and the cherries. Add the vinegar, sugar and salt. Season with pepper to taste. Allow to reduce and cook over medium heat for about 15 minutes. Arrange the slices of cheese on the bread. Grill for about 5 minutes to toast the bread and to melt the ‘cheese’. Top with the cherry preserve and serve. A sure way to trick the non-initiated into thinking they are eating cheese!
