This week’s recipe is the perfect fall treat! Les Tartelettes aux Pommes comes from the Cafe en Plein Air section of this cookbook, which is meant to evoke the flavors and feelings of walking through a French open-air market. These will be a delightful addition to any fall festivities (and I bet they’d nicely complement last week’s Pumpkin Fritters)! Keep reading for the full recipe.

Les Tartelettes aux Pommes

1 1/3 cups unsalted butter, softened
1 cup sugar
1/3 cup brown sugar
6 eggs
1 1/2 cups chopped pecans
2 1/2 cups flour
6 tart apples, cored and peeled
3 tablespoons lemon juice
Apple jelly for glazing

Preheat oven to 350 degrees. In a large mixing bowl, combine butter and sugars until well blended. Add the eggs one at a time, mixing well after each addition. Fold in the nuts and flour, mixing well. Butter 12 individual tart molds, and pat some dough mixture into the bottom of each. Slice the apple thinly and divide the slices among the twelve tarts. Arrage the apple slices in a pinwheel design. Sprinkle with lemon juice. Bake the tarts for 15 to 20 minutes or until their edges are golden brown. Spread apple jelly over the hot tarts. Return to oven for 5 minutes. Cool before serving.

Yield: 12 servings
